I recently made this cake for a morning tea at work....
I had forgotten how much I loved it!
I have one cake recipe that I use for everything...
it was originally Mum's chocolate cake recipe &
I just adapt it with different flavours.....
LIME & COCONUT CAKE
1 cup of sugar
1 cup of SR flour
1/2 cup of lime juice
(2 should be about right)
2 beaten eggs
about 1/2 cup of drained crushed pimneapple
1/2 cup of shredded ccoconut
& the zest of the limes
Then pour 125g of melted butter into the mixture
and stir until well combined.
Pour into a greased ring tin & bake
in a moderate oven for about 35-40 min.
